Day 2: Let the Spiritual Journey Begin!
So I made it through day 1! I’ll admit I felt a little weak towards the end of the day, but knowing the ultimate goal I will reach despite feeling weak every now and then, made my focus my body go away. I have always been a Christian and have felt that I have had a good relationship with God, but with this process I want to make it even better. I also have some things going in my life that I want guidance on and I hope as I am able to give clearer focus from my mind and soul to God, He will give me the guidance I am looking for. Today was a better day food-wise because I was able to cook some dishes that I can better enjoy. My lovely wife helped me prepare a vegan inspired chili (see recipe below) and lentil soup. Both are delicious! Having the support of friends and family on this journey only makes me more excited to get something out of this experience. Day 3 tallyho! Psalm 25:4-5: Show me your ways, Lord, teach me your paths. Guide me in your truth and teach me, for you are God my Savior, and my hope is in you all day long.
Vegan Chili – http://www.fullofbeans.us/the-best-vegan-chili-ever/ – NOTE! I didn’t include the sugar or agave in this recipe and I also added TVP or textured Vegan Protein. Here is a video on how to prep that – http://bit.ly/1G5HgDT – I also added more spices to this chili to give it a kick. Otherwise it tastes very marinara like. Enjoy!
